This is delicious and so quick and easy! Even though it is a breakfast casserole, we like to have it for dinner sometimes. It also makes an excellent brunch served with fresh fruit and croissants.

Ingredients

1 pkg
real bacon pieces
1 c
chopped onion
2 c
cheddar cheese, shredded
1 1/4 c
swiss cheese, shredded
4 c
frozen hashbrown potatoes, shredded
1 1/2 c
small curd cottage cheese
6 large
eggs
3 Tbsp
oil
salt and pepper to taste

Directions Step-By-Step

Let hashbrowns thaw. Preheat oven to 350 degrees. Heat oil in skillet and cook onion until tender. Add package of real bacon pieces last few minutes of cooking. Pour in large bowl.

Add thawed hashbrowns to onion and bacon mixture. Add cheddar and swiss cheese. Add cottage cheese. Mix well.

In separate bowl, beat eggs lightly with fork. Add to mixture. Add salt and pepper to taste.

Transfer to a 9 x 13 pan that has been sprayed with non-stick cooking spray. Bake at 350 degrees for 35 minutes.
