Ingredients For beef & potato casserole

  • 8 oz
    mushrooms, sliced
  • 1 lg
    onion, chopped
  • 1 lb
    ground beef
  • 1 - 16 oz jar
    taco sauce
  • 2 - 14 oz can
    whole new potatoes, drained, rinsed & quartered
  • 1 jar
    tostitos salsa con queso

How To Make beef & potato casserole

    Preheat oven to 375 degrees F. Coat 11" x 9" baking dish & a large skillet with cooking spray.

    Heat skillet over medium heat & add mushrooms & onion; cook, stirring occasionally, until softened, 10 minutes. Add beef; cook, stirring to break up, until browned, 5 minutes. Add taco sauce; cook until thickened, 3 minutes.

    Transfer to baking dish. Top with potatoes, then salsa con queso. Bake 25 minutes or until heated through. Preheat broiler & broil 3 minutes or until lightly browned.
