Ingredients

5 lb potatoes - whichever kind you like
2 stick butter
1/4 c chives, dried
salt & pepper to taste
4 c shredded cheese - can use whatever blend you prefer
2 pkg real bacon bits
24 oz sour cream - can use low fat or fat free
*****you can increase the sour cream - i encourage you to taste at the mixing step and get it to your liking. we use a lot of sour cream!

The first Thanksgiving my husband and I were married, we had everyone over for thanksgiving. This recipe was born out of wanting to change some things up and have something a little different. It is very hard for me to measure things out because I am not a measuring kind of cook - I eyeball everything, but this is as close as I can get! This has become my requested dish for every family function we go to because everyone loves it sooo much!

Directions

Peel, wash, and dice potatoes. Put in large pan and cover with water. Add chives and one stick of the butter. Also add salt and pepper to your taste.

Cook potatoes until fork tender and drain (usually about 45 minutes) Place in mixing bowl with remaining stick of butter and 1/2 the sour cream to start with. Add salt and pepper to taste. Mix potatoes on low speed to blend everything. Add remaining sour cream to get potatoes to your preferred consistency.

After potatoes are mixed, take a 9X13 casserole dish and layer potatoes, cheese, and bacon bits. Repeat so that you have atleast 2 layers.

Cook on 350 for approximately 35 minutes or until cheese is bubbly.

***CAN BE PREPARED AHEAD OF TIME AND/OR REFRIGERATED, YOU WILL JUST NEED TO INCREASE THE COOK TIME**

When you mix the potatoes w/ the sourcream,butter,salt,and pepper. do you mash them like mashed potatoes or just smash them and leave them chunky? I am assuming the latter.

I make them with a mixer and have them smooth... it's really to preference, whether you like them lumpy or not...

I do this with all the same ingredients (except the sour cream) but I bake my potatoes, scoop them out and add all the goodies. I put them in a casserole and bake them again. It's my version of twice baked except I move them to a dish instead of putting them back in the potato skins. This sounds great!

This is also very similar to what I use in my twice-baked. I like the idea of a casserole however, and will be trying it this way. Thank you for sharing and congrats on your ribbon!
