Ingredients For baked eggs w/ potatoes & bacon

1 1/2 Tbspolive oil, extra virgin

2 Tbspbutter

2 cfingerling potatoes, roughly chopped

8 slicebacon, chopped into 1" pieces

1 lgonion, diced

8 x lgeggs, divided

salt & pepper, to taste

1 ccheddar cheese, shredded, divided
How To Make baked eggs w/ potatoes & bacon

1Preheat oven to 350 degrees F.

2Add olive oil & butter to a frying pan, add the bacon, potatoes & onion & season with salt & pepper to taste & cook until the fingerling potatoes almost cooked through, about 10 - 15 minutes. NOTE: Leave the potatoes slightly underdone because they will continue to cook in the oven.

3Split the potato/bacon/onion mixture in 4 large ramekins. Crack 2 eggs per larger ramekin & season with salt & pepper. Put ramekins on a baking sheet & bake for 10 - 15 minutes until the egg whites set but the yolk is still slightly runny. As soon as they come out of oven, sprinkle with cheese & enjoy!
