~ Awesome Sweet Potato Casserole ~

- 2 - 29 oz
- cans, sweet potatoes, drained - or can use fresh cooked sweet potatoes ( mashed ) - i add extra sugar if using fresh. )
- 5 Tbsp
- butter, melted
- 1/4 c
- each - brown sugar & granulated sugar
- eggs, beaten lightly
- 1 1/2 tsp
- pure vanilla extract
- 3/4 tsp
- 1/3 c
- plus 2 tablespoons - heavy cream
- 1 c
- chopped pecans
- 3/4 c
- packed, brown sugar
- 1/4 c
- plus 1 tablespoon flour
- 3 Tbsp
- melted, butter
1Preheat oven to 325 degree F.
Grease a 9 x 13 baking dish or same sized casserole dish..
In a large bowl, mash potatoes, along with - melted butter, sugars, eggs, extract, cinnamon and cream.
Spread mixture into prepared dish.
In a dish, combine pecans, flour, butter and brown sugar.
Crumble evenly over potato mixture. Bake for 30 - 40 minutes or until bubbly and topping is golden.
Note* Sometimes I make an extra half recipe of topping.
