Ingredients

8 - 10
potatoes, cut into cubes
1 can(s)
corn, drained
1 can(s)
green beans, drained
1 can(s)
black olives, sliced & drained
1 can(s)
mushrooms, sliced & drained
cheese, shredded
sour cream (optional)
extra virgin olive oil

Directions Step-By-Step

Set oven to 350 Degrees, mix Potatoes, Corn, Green Beans, Olives & Mushrooms together in a large bowl.

Add EVOO to the mixture, just enough to coat the veggies lightly.

Pour mixture into a cake pan, evening mixture throughout the pan. Sprinkle as much Cheese as you would like across the top of the mixture.

Put pan into the oven and bake for 45 minutes or until cheese is melted and potatoes are soft.

Serve with a dollop of Sour Cream on top & Enjoy!
