My Aunt came up with this recipe one day.

Ingredients

8 - 10
potatoes, cut into cubes
1 can(s)
corn, drained
1 can(s)
green beans, drained
1 can(s)
black olives, sliced & drained
1 can(s)
mushrooms, sliced & drained
cheese, shredded
sour cream (optional)
extra virgin olive oil

Step-By-Step

1Set oven to 350 Degrees, mix Potatoes, Corn, Green Beans, Olives & Mushrooms together in a large bowl.

Add EVOO to the mixture, just enough to coat the veggies lightly.
2Pour mixture into a cake pan, evening mixture throughout the pan. Sprinkle as much Cheese as you would like across the top of the mixture.
3Put pan into the oven and bake for 45 minutes or until cheese is melted and potatoes are soft.

Serve with a dollop of Sour Cream on top & Enjoy!
