This recipe was in an old magazine I had. Yummy. Pinched the photo off the web. This is a great way to use those leftover mashed potatoes.

Ingredients For au gratin potato pancakes

  • 2 c
    mashed potatoes (without added milk and butter)
  • 1
    egg, lightly beaten
  • 1 Tbsp
    minced chives
  • 1 tsp
    minced fresh parsley
  • 3/4 tsp
    salt
  • 1/8 tsp
    dried minced garlic
  • 1/8 tsp
    pepper
  • 1 dash
    dried rosemary, crushed
  • 1/2 c
    shredded sharp cheddar cheese
  • 4 Tbsp
    canola oil, divided

How To Make au gratin potato pancakes

    In a large bowl, combine the first 8 ingredients. Stir in cheese.

    Heat 2 Tbsp. oil in a large non-stick skillet over medium heat. Drop batter by 1/4 cupfuls into oil; press lightly to flatten. Cook in batches for 2-3 minutes on each side or until golden brown, using remaining oil as needed. Drain on paper towels.
