Boil potatoes until just soft, not mushy. Peel or leave skin on, your preference.
While potatoes are still warm cut in quarters.
Chop onion until finely chopped, also chop celery.
Add to potatoes with the salt and pepper.
Add mayo according to you taste. Some like it wet, some like it drier. Mix together.
Refrigerate. Mix again before serving.
