Ingredients For ali's potato gruyere chowder

  • 8 slice
    bacon (*or substitute fake bacon for veg version)
  • 2 Tbsp
    olive oil, if needed
  • 1 lg
    onion, chopped
  • 1 lg
    shallot, chopped
  • 2 clove
    garlic, chopped
  • 3 c
    potatoes, any color (dice into 1/4 inch pieces)
  • 1 tsp
    salt
  • 1 Tbsp
    dijon mustard
  • 3 c
    milk
  • 1 c
    gruyere cheese, grated
  • another 1 tsp. salt
  • freshly ground pepper
  • fresh chives for garnish

How To Make ali's potato gruyere chowder

    In a large pot, cook the bacon according to package directions, until browned and crisp. Cool and chop into small pieces. Set aside.

    In the same pot over med-high heat, add the onions, shallot and garlic. (add a little olive oil if needed.) Saute for 5 min. or until the onions start to get soft.

    Add the diced potatoes and 1 tsp salt, saute for about 2 minutes. Add the mustard and milk. Bring to a boil, then simmer for about 25 minutes, or until potatoes are soft and soup thickens.

    Whisk in the Gruyere cheese, another tsp. of salt, and a few pinches of pepper. Garnish with the bacon and chives.
