Saffron Orzo with Dried Cherries

This is good cold or at room temperature. A great side dish for poultry.

Ingredients

6 c
water
1 c
orzo pasta, uncooked
1/4 tsp
saffron threads
1 Tbsp
grated orange rind
2 Tbsp
orange juice
3 Tbsp
olive oil
1/3 c
dried cherries, chopped
3 Tbsp
slivered almonds, toasted
2
green onions, thinly sliced
salt and pepper to taste

Step-By-Step

1Combine first three ingredients in a saucepan and bring to a boil. Cover, reduce heat, and simmer eight (8) minutes, Drain and set aside.
2Toast almonds and set aside.
3Whisk orange juice, orange rind, and olive oil together in a small bowl.
4Combine cooled and drained orzo with dried cherries, almonds, and green onions. Toss with dressing. Season with salt and pepper to taste.
