uncooked elbow macaroni
fresh ground pepper
dried ground mustard
cheddar cheese, shredded
Prepare macaroni as directed on package.
As the pasta cooks prepare cheese sauce. In a small bowl combine flour and spices and set aside.
In a medium sauce pan on low heat melt the margarine and then slowly sprinkle in flour mixture and stir to combine cooking for 2-3 min to cook out the raw flour flavor.
Slowly add milk, whisking constantly until mixture comes to a boil, let boil for 1 min.
Remove from heat and stir in cheese until smooth.
Reserve 1/2 cup of pasta water and then drain pasta. Add warm pasta to cheese mix to combine. Use reserved pasta water to thin out to your liking if necessary.
