This recipe was given to me by my sister-in-law. It makes a very creamy dish. I use 1% cottage cheese and light sour cream. Can also use lower fat cheddar cheese.

Ingredients

1 1/2 c
elbow macaroni, cook according to pkg. directions
1 c
sour cream, lite or regular
1
egg, beaten
1 1/2 c
cottage cheese, small curd. use lower fat options if desired
12 oz
shredded cheddar cheese, use lower fat if desired
salt & pepper to taste

Step-By-Step

1Mix together the sour cream, egg, cottage cheese and cheddar cheese. Add to the cooked, drained macaroni.

2Grease a casserole and add the mixture to the dish. If desired, you can top with Ritz crackers mixed with melted butter. Bake at 350 degrees for 30-45 minutes.
