Ingredients

1 medium
butternut squash cooked and mashed
4 Tbsp
butter
1 medium
onion diced
3 clove
garlic minced
8 oz
fresh mushroom sliced
1 c
chicken stock
1 c
heavy cream
salt and pepper to taste
1 c
grated parmesan cheese
8 oz
fettuccine pasta cooked and drained
2 Tbsp
fresh or dried sage

Directions Step-By-Step

Melt the butter in a large saute pan. Saute the onion and mushrooms over medium heat for 5 minutes. Add the garlic and cook 3 minutes.

Add the squash, chicken broth, and cream. Bring to a simmer and cook stirring until reduced a bit. Add the parmesan cheese and stir and cook until melted.

Add the fettuccine tossing to coat well.
Top with fresh or dried sage
