Amazingly, tastes like mashed potatoes and is very low on the glycemic index. Great for diabetics.

Ingredients

1 large
large fresh cauliflower
1 c
salt free chicken broth
4 oz
light cream cheese
1 tsp
salt
1/2 tsp
pepper
1 Tbsp
butter

Step-By-Step

1Cut cauliflower into florets.
2Cook in medium pot with chicken broth until tender.
3Drain and add remaining ingredients and mash.
