Ingredients For citrus ginger couscous

1 Tbsp(15 ml) vegetable oil

1onion, chopped

2 clovegarlic, minced

1/4 tsp(1 ml) salt

1/4 tsp(1 ml) pepper

1sweet red pepper, chopped

1 tsp(5 ml) grated gingerroot

1 tsp(5 ml) grated lime rind or grated lemon rind

1 1/2 c(375 ml) vegetable stock

1 c(250 ml) whole wheat couscous or regular couscous

1/2 c(125 ml) chopped cucumbers

1/4 c(60 ml) pistaschios

2green onions, chopped
How To Make citrus ginger couscous

1In small saucepan, heat vegetable oil over medium heat; cook onion, garlic, salt, pepper, sweet red pepper, ginger root and grated lime stirring often, until softened, about 4 minutes.

2Pour in vegetable stock bring to boil. Stir in 1 couscous. Remove from heat. Cover and let stand for 5 minutes.

3Add cucumber, nuts and green onions; fluff with fork.
