Ingredients

1-15oz can(s) tomato's
1-1 1/2 pkg sleeve saltine crackers
1/2-1 tsp sugar
2-3 Tbsp oil for frying

carlene's Notes:

My mom made these for us growing up. I came from a family of six girls,we all loved them. Hope you will too. If you like stewed tomato's,your likely to like these. I never tried to change this recipe because i like them the way they are,but i'll bet you could add other things.

 

Directions

Drain liquid well from tomato's,place in medium size bowl. Add as much of the sugar as needed to make tomato's not so tangy,but not too sweet.

Add enough crackers to make a patty,the size of a potato cake.

On a greased griddle cook medium heat,til browned about 5 minutes,flip and cook other side. You can also fry in a skillet adding enough oil as needed to keep them from sticking.

Hi Carlene,
Do you use whole,chopped or crushed tomatoes?I would think whole tomatoes would be too large to make patties.

Joanie,
I use whole tomato's because by the time you add the crackers,i add them with my hands,they squish and break down anyway. Hope that helps.
