Ingredients For soft fried noodles with mushrooms

one5 oz pkg fine egg noodles

2 tbssafflower oil

1 cupbamboo shoots
-
1 cupsliced mushrooms
-
1 cupsliced almonds
-
1/2 cupchicken broth
-
3 tbssoy sauce

salt to taste
How To Make soft fried noodles with mushrooms

1Cook noodles in large pot in boiling, lightly salted water 8 minutes, drain well

2Heat oil in wok or skillet over low heat. Add noodles; stir fry 4 minutes. Stir in bamboo shoots, mushrooms,and almonds; mix thoroughly. Stir in broth, soy sauce, and salt. Reduce heat to low; simmer, covered, 20 minutes or until liquid is almost absorbed.
