Red Roasted Potatoe's with parmesan cheese

Mary Gonzalez

I had a taste for roasted potatoes. I used only items I had on hand. I must say I was impressed and will be making these again! Hope you like them too.
Note: Since I gauged the ingredients, you can adjust to your taste preference.

NOTE: I've made these again a few times and can suggest for a shorter baking time, you can par-boil the potatoes first: Place potatoes in a pot of water with salt until water begins to boil, shut off and let sit in the hot water for about 20 minutes. Rinse and let cool before cutting into cubes. This will cut your baking time by about 15-20 minutes.... ENJOY!
