Potatoes, green beans and tomatoe salad.

6=8 potatoes, 2 lbs. green string beans, 6-8 tomatoes,1 very large sweet onion,1/2 cup olive oil,1/4 cup balsamic vinegar, salt and pepper to taste

Directions Step-By-Step

peel and cut potatoes in large cubes and boil in a big pot of salted water until just fork tender,drain. Snip ends of green beans and boil in salted water until fork tender, drain. When all done put into a big bowl even though it is still warm,slice onion in strips, cut tomatoes in quarters add oil and vinegar and more salt and pepper to taste. Mix well.(If you like more oil and vinegar you can add more too)
