My mother used to make this dish as a side dish when serving her famous enchiladas when I was a young girl. And every friend or family member loves this dish.

Ingredients For mama's cheese and peppers

4 cmonterey jack cheese

6eggs

4cans of ortega peppers (mild)
How To Make mama's cheese and peppers

1Heat oven to 350 degrees

2Grate Cheese

3Open cans of chiles drain well, split each chiles down the side so they will lay flat.

4Beat eggs well

5Place a layer of cheese in bottom of a 8" by 13" baking dish, then place a layer of chiles on top. Keep layering until chiles are all used. Making your last layer of Cheese. Pour beat eggs over entire dish bake for 15 minutes until cheese is melted and eggs are set. Allow to cool for a few minutes. Cut into squares and serve as a side dish.
