Ingredients

1 c
butter
1/2 c
brown sugar
1 c
flour
1 1/2 c
grated raw carrots, drained
2
eggs, separated
1 Tbsp
lemon juice (optional)
1 Tbsp
water
1 tsp
baking powder
1/2 tsp
baking soda
1 tsp
salt
1 tsp
cinnamon
1/4 tsp
nutmeg

Step-By-Step

1Cream butter and brown sugar.

2Add carrots, egg yolks, lemon juice and water.

3Sift dry ingredients and then add.

4Fold in stiff egg whites.

5Put into a greased ring mold, spread with bread crumbs (optional)
Place in refrigerator overnight. This mellows the flavor. (optional)
Remove from refrigerator 1 hour before baking. (optional)

6Bake at 350 degrees for 15 minutes, then 375 degrees for 30 minutes.
