GRANDMA JOJO'S COLE SLAW

JOANN MCGUIRE Recipe

By JOANN MCGUIRE JOANNMC999

I love cole slaw as a side dish. Anytime we've gone out and had it, it always had a bite to it. Too much vinegar. I add pineapple juice and it is delicious. My husband says it's the best and I've been making this for over 35yrs.

Oh my gosh, I made two batches (one as posted and one tweaked) of this to take to a fund raiser and I have never had so many compliments on a recipe as I had with this one! Every single person who tried either version of it said it was the best they have ever had. I had people tell me that they really didn't like coleslaw but absolutely loved this! I made one batch exactly as posted here and loved it so on the second batch I tweaked it to add things my family loves. I doubled the recipe, except for the pineapple juice. I only added 5 tablespoons. I added 1/2 of a green pepper, 1/2 of a red pepper, 1/2 of a large sweet onion and 1/2 of one shallot (very finely chopped/minced). It wasn't quite as creamy as we like it because of the added veggies so I ended up adding one serving spoon more of mayo and sour cream, 1 tablespoon of sugar and 1/4 teaspoon of ground mustard. I also added a little fresh ground pepper and some fresh ground sea salt. It was just awesome!!! Thank you so much for sharing this recipe! I may not be around to make this for 35 years but I will be making it right up until the end! Thanks again, Joann!
