A family favorite for any time of the year. So good!! Slather with butter. I use thawed frozen corn for this. You can use drained canned corn. Enjoy!

Ingredients For country cornbread

1 1/4 cups cornmeal

3/4 cup all-purpose flour

5 tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 cup buttermilk

1/3 cup oil

1 egg, beaten
-
1 cup sharp cheddar cheese, grated

1 cup corn
-
1 tablespoon fresh jalapeno, seeded and minced
How To Make country cornbread

1In large bowl, mix together cornmeal, flour, sugar, baking powder and salt. Make a well in the center of the mix and pour in the buttermilk, oil and egg. Stir lightly until ingredients are lightly moistened. Fold in cheese, corn and jalapeno; stir. Pour mixture into lightly oiled 8x8 baking dish.

2Bake at 375 for 25-30 minutes, or until tested clean in center. Let cool slightly, cut into squares.
