Two days prior to baking, lay out slices of bread to dry. The amount will depend on how big a dish of dressing you want.
Break dried bread into a large mixing bowl. Cut and add onion to taste and celery leaves. Add pepper (and salt, if not using broth from the Amish Turkey recipe). Add 2-3 eggs and broth from baked turkey along with pieces of turkey meat and stir until bread is completely soaked and soupy. More broth may be needed at this point.
