This recipe has been in my family for as long as I can remember. We always called it "pineapple stuff" and it always made an appearance at family dinners. It is slightly sweet but we always had it as a side dish. I hope you all enjoy it!

This scalloped pineapple is a snap to put together. We would gladly eat it as a side dish. It would be great served alongside ham. But it's sweet enough to make a delightful dessert as well. The texture reminds us of a bread pudding.

Ingredients For scalloped pineapple

  • 4 c
    bread cut into cubes
  • 1/2 c
    butter, softened
  • 2 1/4 c
    sugar
  • 4 lg
    eggs, beaten
  • 1 c
    milk
  • 1 can
    crushed pineapple with juice (20 oz)

How To Make scalloped pineapple

  • Butter, sugar, eggs, and milk in a bowl.

    Mix butter, sugar, eggs, and milk together in a large bowl.
  • Crushed pineapple added to the bowl.

    Add large can of crushed pineapple and juice to mixture in bowl. Mix well.
  • Folding in cubes of bread.

    Fold in bread cubes until all bread is coated.
  • Mixture poured into a baking dish.

    Pour the mixture into a buttered casserole dish. Slightly packing the mixture into the dish.
  • Scalloped pineapple baking.

    Bake at 350 degrees for 35-40 minutes or until golden brown.
