Pineapple Gratin

My neighborhood favorite. Accompanient to ham, turkey, chicken or pork.

1 can(s)
(20 oz) chunk pineapple in juice (undrained)
1 can(s)
(8 oz) crushed pineapple
1/3 c
sugar (can substitute splenda)
3 Tbsp
all-purpose flour
1 c
(4 oz) shredded sharp cheddar cheese
1/2 c
ritz cracker crumbs
2 Tbsp
butter, melted


1Preheat oven to 350 - lightly grease shallow baking dish

2Drain pineapple, reserving 3 tablespoons of juice

3Combine reserved (3 tbls) pineapple juice, sugar and flour

4Stir in pineapple chunks, crushed pineapple and cheese

5Spoon into shallow, lightly greased baking dish.

6Combine cracker crumbs and butter, sprinkle evenly over pineapple mixture

7Bake 350 degree oven for 25 minutes or until bubbly

8To double recipe - for 2 quarts - 7 1/2 x 12 casserole
