My neighborhood favorite. Accompanient to ham, turkey, chicken or pork.

Ingredients

1 can(s)
(20 oz) chunk pineapple in juice (undrained)
1 can(s)
(8 oz) crushed pineapple
1/3 c
sugar (can substitute splenda)
3 Tbsp
all-purpose flour
1 c
(4 oz) shredded sharp cheddar cheese
1/2 c
ritz cracker crumbs
2 Tbsp
butter, melted

Directions Step-By-Step

Preheat oven to 350 - lightly grease shallow baking dish

Drain pineapple, reserving 3 tablespoons of juice

Combine reserved (3 tbls) pineapple juice, sugar and flour

Stir in pineapple chunks, crushed pineapple and cheese

Spoon into shallow, lightly greased baking dish.

Combine cracker crumbs and butter, sprinkle evenly over pineapple mixture

Bake 350 degree oven for 25 minutes or until bubbly

To double recipe - for 2 quarts - 7 1/2 x 12 casserole
