Cream the butter & sugar. Beat the eggs slightly, add to the butter & sugar, beat well until well mixed. Add the bread and pineapple with juice, being sure not to stir too much, will bread down your bread and make it mushy. Pour into greased 13x9 casserole dish. Sprinkle the top with cinnamon sugar as desired. Bake @ 350 for 1 hour. Be sure that the center tests done and is not "jiggly". Eggs need to be done.
This can be served for a brunch as well. The original recipe called for 1 cup of sugar, too sweet for my taste, therefore 3/4 cup. I have baked this in muffin cups for brunch, nice presentation. I have purchased & used the bagged soft bread cubes that is used for stuffing,it works quite well. I tend to double this for holiday meals, great reheated. Enjoy!
