Crockpot Homemade Applesauce

large granny smith apples (5 1/2 pounds)
american spice vietnamese cinnamon (any cinnamon will be fine)
Peel, core, and cut apples into 1 1/2 inch chunks. Place in a large bowl. Toss apples with orange juice when adding to the bowl.
Toss with sugar and cinnamon.
Place apple mixture in a 6 quart slow cooker. Cover and cook on HIGH 4 hours.
Stir and mash until desired consistency. Store in the refrigerator in an airtight container for up to 1 week.
Makes approximately 8 cups.
