apple and cranberry stuffing

Ingredients For apple and cranberry stuffing

    1 pound loaf country style bread, cut inyo 1/2" cubes
  • 8 Tbsp
    unsalted butter
  • 2 lg
    onions, finley chopped
  • 2
    celery ribs, with some leaves, finely chopped
  • 2 lg
    granny smith apples, cored and diced
  • 1 tsp
    dried sage
  • 1 tsp
    dried thyme
  • 1/2 tsp
    nutmeg
  • salt and pepper to taste
  • 1 c
    dried cranberries
  • 1/3 c
    minced parsley
  • 1-1/2 c
    lower-sodium chicken broth, heated

How To Make apple and cranberry stuffing

    Heat oven to 325. Spread bread on 2 jelly-roll pans. Bake, stirring a couple of times, for about 20 mins. Reserve. Spray a 4-quart baking dish w/ cooking spray. In lg skillet over medium heat, melt 2 tbsp butter. Add onions and celery. Saute, stirring, untill softened, about 10 mins. Transfer to lg bowl.

    Return skillet to medium heat, add 1 tbsp butter. Add apples, saute until glazed and brown. Add apples to onion mix. Stir in sage, thyme and nutmeg. Add salt and pepper to taste.

    In same skillet, melt remaining butter over medium heat. Stir in cranberries, parsley and reserved bread. Add to apple mix, toss to blend. Moisten w/ broth, 1/2 cup at a time, stirring to mix. Transfer stuffing to baking dish. Cover lightly w/ foil, bake 40 mins. Uncover and bake about 20 mins, or until browned and crisp on top.
