Ingredients

  • 6 1/2 cups diced sweet red peppers
  • 7 1/2 cups diced green peppers
  • 6 cups diced onions
  • 2 quarts boiling water
  • 3 cups cider vinegar
  • 2 1/2 cups sugar
  • 1 tablespoon canning salt
  • 2 teaspoons mustard seed
  • 1 teaspoon celery seed

How To Make sweet pepper relish

  • Step 1
    In a large container, combine peppers and onions. Pour boiling water over and let stand for 20 minutes; drain well.
  • Step 2
    In a large kettle, combine the remaining ingredients; bring to a boil. Add pepper mixture; cover and simmer for 20 minutes.
  • Step 3
    Pour hot into jars; leaving 1/4 inch headspace. Adjust lids. Process for 15 minutes in a boiling water bath.
