Shallot Butter

This shallot flavored butter goes great on broiled or grilled fish and meats or on omelets. The recipe originally came from one of my mother’s recipe files.

Ingredients

1/2 c
(1 stick) butter, softened
4 tsp
finely chopped shallots
1 c
dry white wine
salt and white pepper to taste
1 Tbsp
finely chopped parsley

Step-By-Step

1Combine shallots and wine in a saucepan and simmer until wine is reduced to 1/4 cup.
2Cream butter with a fork in a bowl. Gradually stir in shallot wine, parsley, and salt and white pepper to taste.
