Use as you would any tahini but it's especially nice thinned with a bit of olive oil and drizzled over steamed veggies. Be inventive and enjoy.

Ingredients For middle eastern tahini

  • 2 c
    white sesame seeds
  • 1 Tbsp
    za'atar spice mix (https://www.justapinch.com/recipes/main-course/main-course-other-main-course/zatar.html)
  • 1 tsp
    smoked paprika use and amount optional to your liking)
  • zest of one lemon
  • 1/2 tsp
    salt (optional)
  • 1-2 Tbsp
    neutral flavored oil

How To Make middle eastern tahini

  • 1
    Preheat oven to 325f. Roast nuts (and or seeds) for 10 to 15 mins. Stir twice during this time.

    Transfer to a food processor or high powered blender while still warm. Process until finely ground, about 3-4 mins.

    Add 1/2 tsp salt and 1 to 2 Tbsp of neutral tasting oil such as canola or grape seed oil. Continue to blend until smooth and creamy adding a few more drops of oil only if needed. At this point also blend in the rest of the ingredients.

    Taste and adjust seasonings if needed. Enjoy.
