Ingredients For middle eastern tahini

2 cwhite sesame seeds

1 Tbspza'atar spice mix (https://www.justapinch.com/recipes/main-course/main-course-other-main-course/zatar.html)

1 tspsmoked paprika use and amount optional to your liking)

zest of one lemon

1/2 tspsalt (optional)

1-2 Tbspneutral flavored oil
How To Make middle eastern tahini

1Preheat oven to 325f. Roast nuts (and or seeds) for 10 to 15 mins. Stir twice during this time.

2Transfer to a food processor or high powered blender while still warm. Process until finely ground, about 3-4 mins.

3Add 1/2 tsp salt and 1 to 2 Tbsp of neutral tasting oil such as canola or grape seed oil. Continue to blend until smooth and creamy adding a few more drops of oil only if needed. At this point also blend in the rest of the ingredients.

4Taste and adjust seasonings if needed. Enjoy.
