Crock Pot Hummus

This process is great; the chickpeas are cooked through and less sodium!

Slow Cooker Crock Pot

Ingredients

1 lb
dried chickpeas, sorted, rinsed
7 1/4 c
water
1/3 c
lemon juice
1/3 c
tahini
1/4 c
olive oil
1 1/2 tsp
salt
1 tsp
garlic, minced
1/4 tsp
baking soda

Step-By-Step

1Place chickpeas into crock pot with water and stir in baking soda. Cover and cook on low overnight (8 1/2 hours) or on high for 4 hours.

2Drain chickpeas and put into processor or blender with salt and garlic. Process 1/2 minute. Add tahini and process until smooth. Stir and scrap sides; add olive oil and lemon juice.
