Blender Mayonnaise

This is so easy and so delicious AND it can be used as a base for other sauces.
This makes 1 cup ...although I have never doubled it but I am sure you could.

1 cup

Ingredients

1
egg or 2 egg yolks
1 tsp
dijon mustard
1/2 tsp
salt
1 Tbsp
white vinegar or lemon juice
1 c
vegetable oil.....i use olive oil

Directions Step-By-Step

In a blender, combine egg, mustard, vinegar and 2 thsps of the oil.
Blend for 30 seconds . With blender still running slowly drizzle the remaining oil into mixture until all oil is used and mixture is thick.
taste and adjust seasonings. Store in ajar in fridge.

NOTE:
Just to let you all know I used raw eggs in this recipe so please feel free to use pasteurized eggs if you have any health concerns or for elderly or pregnant mums.
