The Man is a stickler for sauces with every meal. He goes through a huge amount of tartare sauce, apple sauce, onion relish etc... So making my own is a must.

Ingredients

fluid ounces of mayonaise
3 Tbsp
capers - drained & chopped
3 Tbsp
small gherkins - drained & chopped
3 Tbsp
freshly chopped parsley
a squeeze of lemon juice
freshly ground salt & pepper to season

Directions Step-By-Step

To chop the capers and gherkins I used the nut chopper attachment for my hand blender.

Mix everything together in a bowl and spoon into a sterilised jar. Cool in fridge for about an hour before first serving.

Will store for a couple of months in the fridge once the jar is opened.
