Ingredients

8 c
chicken broth
2 c
olive oil
1 medium
onion
6 clove
garlic
1 Tbsp
ancho chile powder
2 Tbsp
tamarind paste
1/2 c
brown sugar
1 c
fresh pineapple chopped
1 tsp
salt
3/4 c
ketchup

Step-By-Step

1Place chicken stock in a medium saucepan over high heat and reduce to four cups. Heat olive oil add onions and garlic and cook until soft. Add the chile powder and cook 2 more minutes.

2Add the reduced stock and bring to a simmer, whisk in tamarind,brown sugar,and ketchup. Add in pineapple and simmer 45 minutes.

3Place mixture in food processor and then strain. Put in saucepan and cook another 15 minutes until thickened. Season with salt. Place in jars and water bath 15 minutes.
