Roasted Garlic Arugula Pesto

olive oil, extra virgin
Place garlic cloves in one teaspoon of olive oil and roast on medium until brown.
Add all ingredients to food processor including roasted garlic and its oil. Blend until smooth. You may need more oil if necessary.
Taste for salt and pepper and adjust. Serve over warm crostini as an appetizer or drizzled over steamed artichokes as a side dish. Tonight I am adding it to an artichoke and mushroom pasta dish.
