Ingredients For tomato preserves

  • 1 Tbsp
    mixed pickling spices
  • 1
    piece ginger root
  • 4 c
    sugar
  • 2
    lemons, thinly sliced
  • 2 lb
    firm red, green, yellow tomatoes, peeled

How To Make tomato preserves

    Tie spices in a cheesecloth bag and add to sugar, lemon, and water. Simmer for 15 minutes. Add tomatoes and cook gently until tomatoes become clear.

    Stir occasionally to prevent sticking. Cover and let stand overnight, in a cool place.

    Heat to boiling. Pack tomato pieces and lemon into hot sterile jars, leaving 1/2 inch headspace. Remove spice bag from remaining liquid (syrup) and boil for 2 to 4 more minutes. Pour hot mixture over tomatoes. Wipe jar rims with hot cloth to allow for proper sealing.

    Remove air bubbles from jars, cap, and process in boiling water bath for 20 minutes
