Ingredients For tomato preserves

1 Tbspmixed pickling spices

1piece ginger root

4 csugar

2lemons, thinly sliced

2 lbfirm red, green, yellow tomatoes, peeled
How To Make tomato preserves

1Tie spices in a cheesecloth bag and add to sugar, lemon, and water. Simmer for 15 minutes. Add tomatoes and cook gently until tomatoes become clear.

2Stir occasionally to prevent sticking. Cover and let stand overnight, in a cool place.

3Heat to boiling. Pack tomato pieces and lemon into hot sterile jars, leaving 1/2 inch headspace. Remove spice bag from remaining liquid (syrup) and boil for 2 to 4 more minutes. Pour hot mixture over tomatoes. Wipe jar rims with hot cloth to allow for proper sealing.

4Remove air bubbles from jars, cap, and process in boiling water bath for 20 minutes
