Ingredients

1 - 15 oz
can, rinsed garbanzo beans
1 medium
to large tomato, chopped
3 - 4
green onions, sliced - plus ends
1 - 1 1/2 oz
cubed, cheddar cheese
1 Tbsp
chopped italian parsley or dried
finely
chopped red pepper would be a great addition too, i was fresh out

DRESSING

1/4 c
balsamic vinegar
2 Tbsp
olive oil or your favorite
1/2 tsp
each - salt, sugar, pepper, chili powder
3/4 tsp
cumin

Step-By-Step

Step 1 Direction Photo

1Toss the first 5 ingredients in a medium sized bowl.

Whisk the dressing ingredients until well blended. Pour over bean mixture and toss to coat well.

Chill well and toss again before serving.
