Fresh Cilantro Dressing

I love, love, love Mexican-style salads! This is for one reason only... the cilantro dressing! I love it so much that I had to figure it out myself! Now, after trial and error, I have the perfectly refreshing salad dressing. Best when served over a bed of romaine lettuce with grilled chicken or shrimp, tomato, crumbled cotija cheese, and tons of slices of fresh avocado! Mmmm!!

Food Processor

Ingredients

1 c
mayonnaise
2/3 c
milk
1 Tbsp
fresh lime juice (may add more to taste)
1/2 c
cotija cheese (or other hard cheese i.e. parmesan)
2 Tbsp
white wine vinegar (may add more to taste)
1 Tbsp
sugar
2 clove
garlic (large and peeled)
1/2 small
onion
1 tsp
salt
1/4 tsp
ground cumin
1/2 tsp
ground cayenne
1/4 tsp
pepper
1 bunch
fresh cilantro
1/2 c
pine nuts

Step-By-Step

1In a food processor or blender, combine all the ingredients listed and pulsate until smooth.
2Serve over salad, use as a dip, or add to your fish tacos. So yummy!
