5-minute Creamy Caesar Style Dressing

I've always loved Cardini Creamy Caesar Dressing, but being vegetarian, I would rather not have the anchovies in my dressing. So I set out to create a creamy, vegetarian Caesaresque dressing. I am delighted with the results.

1/2 c
mayonnaise (i use hellmans)
1 Tbsp
lemon juice (or more to taste)
2 tsp
finely grated parmesan cheese (or more to taste)
1 clove
garlic, cut in half
salt and pepper to taste

Directions Step-By-Step

Rub the cut side of the garlic clove over the bottom of a small bowl and discard. (you just want a hint of garlic)
Add the mayonnaise, lemon juice and Parmesan to the bowl and whisk to blend. Add salt and pepper to taste.
Make ahead of time to allow the flavors to blend.

Can easily be doubled.
