Before we moved I had a family of Amish for neighbors...Rachel was the mother of this lovely family...she shared so many Amish recipes with me, and this is one I tweaked, not because it wasn't good, just missing something...so this is my version, which she even agreed was tastier...sure miss them and their home made bread she used to send me, for the use of our phone... This recipe can be used as a dip or for sandwiches...I made pinwheels out of it for lunch...very versatile...enjoy!

Ingredients For rachel's tuna spread & dip

  • 4 oz
    cream cheese softened
  • 1/4 c
    mayonnaise
  • 1/4 tsp
    dried dill
  • 1/4 tsp
    pepper
  • 1/8 tsp
    salt, if desired, olives give it plenty
  • 4 oz
    can, drained well - albacore tuna
  • 1/4 c
    shredded swiss cheese
  • 1
    heaping tablespoon red onion, minced
  • 1/4 c
    green olives, chopped and juice squeezed out
  • 1/4 c
    chopped walnuts
  • cracker, soft tortillas etc to dip or use as spread

How To Make rachel's tuna spread & dip

    In a medium bowl; mix mayonnaise and cream cheese until well blended. Add all remaining ingredients and mix well. It's ready to eat now, or can chill first.

    You can easily double this recipe for a party or to use as a spread for mini pinwheels. I make wraps with spinach as illustrated. It's a very versatile spread.
