Basically this is a layered dip that you serve with round tortilla chips. This dip is very popular in Texas and is great for tailgating.

Ingredients For mexican buffet

  • 2 lg
    cans, bean dip or refried beans
  • 3 lg
    ripe avocados
  • salt to taste
  • pepper to taste
  • 2 Tbsp
    fresh lemon juice
  • 1 ( 8 ) oz
    carton sour cream
  • 1/2 c
    hellmanns mayonaise
  • 1 pkg
    lowery's taco seasoning
  • 1 bunch
    green onions, chopped
  • 3 md
    tomatoes, seeded and chopped
  • 1 sm
    can black olives chopped
  • 3/4 lb
    mild cheddar cheese, grated
  • black olive slices to garnish

How To Make mexican buffet

  • 1
    Spread beans in the bottom of a large platter.

    Mash avocados with salt, pepper and lemon juice. Spread over beans.

    Mix sour cream with mayonnaise and taco seasoning. Spread over avocado.
  • 4
    Sprinkle onions, tomatoes, and chopped olives over sour cream mixture.
  • 5
    Top with grated cheese and garnish with olive slices Serve with round tortilla chips or large Fritos.
