Great appetizer for the summer. Easy to make and very good. Makes a good amount and is easy enough to double up if you want. This can be used as a salsa or salad both.

I always make this the day before so it can chill over night. Than stir and serve. The cilantro really gives it a good flavor and you can use 1/2C or more or less and the same with the garlic. I use more garlic because I really love garlic. So just tweak it to your own liking.
