Ingredients

green, red, yellow or purple bell pepper

ripe tomatoes, cored, seeded, diced

hot peppers (jalapeno or serrano) minced

bunch cilantro, chopped

green onions, sliced into 1/8" rings

olive oil
1/3 c
red wine vinegar
green onions, sliced into 1/8" rings

freshly ground black pepper
1-2 Tbsp
chili powder

salt

Step-By-Step

1In a medium mixing bowl with a cover, stir together garlic, peppers, tomatoes, onion, hot peppers, cilantro and green onions.

2In a small mixing bowl, whisk together olive oil, vinegar, lime juice, pepper, chili powder and salt.

3Pour dressing over vegetables and mix completely.

4Cover and refrigerate several hours to let flavors meld, then return to room temperature before serving.
