Serve as a salsa cold.

If used as a base for shrimp or chicken (add: veg. or chicken broth) (add: can of spiced tomatoes and cup of water) boil down and cook meats in broth.. and serve over rice or Mofongo!!

Ingredients

4 large
bell papers (1 green, 1 yellow, 1 red, 1 orange) (chopped)
1 large
sweet onion (chopped)
1
fresh jalapeno (chopped)
1 bunch
fresh cilantro – chopped
1 Tbsp
capers (whole)
1/2 c
halved olives w/ pimentos
1/4 c
white wine vinegar
2 Tbsp
dried oregano
1 can(s)
can tomato sauce
2 Tbsp
minced garlic. (or more)
1 tsp
garlic salt.
3 Tbsp
olive oil.

Directions Step-By-Step

Chop Bell peppers, onion, Cilantro & Jalapeno. mix together in a bowl.

Add all other ingredients and let sit for at least and hour and serve as a salsa or cold topping.

Alternatively: Use as a base for shrimp or chicken. add to a sauce pan with chicken or Vegi Broth. A can of spiced tomatoes and a cup of water

Boil down and cook shrimp or chicken in lightly boiling broth and serve ever rice or Mofongo..
