Peach Salsa

I needed to use up a couple of very ripe peaches today and this is what I came up with. Served it with seared chicken breasts.

Ingredients

2 medium
fresh ripe peaches
1/2 medium
fresh green pepper
1/4 c
chopped spring onions with green tops
1/4 c
fresh cilantro, chopped
1 tsp
honey
1/2
fresh lemon, juiced + zest
salt 7 pepper to taste

Directions Step-By-Step

remove skin from peaches by peeling or placing peaches in boiling water for 2 minutes and then plunging into ice water. Dice peaches and place in bowl.

Dice green pepper, chop onions and cilantro and add to peaches.

Add honey, lemon juice, zest, salt & pepper. Stir well and let sit at room temperature for 1/2 hour for flavors to marry
