Ingredients

2 c
seeded, chopped tomatoes (red, yellow and orange)
1/4 c
diced green or red onion
1/2 tsp
minced garlic
3/4 tsp
freshly ground cumin, roasted
2 Tbsp
freshly squeezed lemon juice
1
jalapeño pepper, seeded and diced
1
banana pepper, stemmed and diced
1/4 c
diced green mango (optional)
salt and pepper
1/2 c
minced cilantro leaves (for garnish)

Step-By-Step

1Combine the first seven ingredients and the mango, if using. Season to taste with salt and pepper. Refrigerate. Just before serving, garnish with the cilantro.

The "heat" from the jalapeño is from the seeds and the rib. Remove completely for almost no heat or adjust removal of seeds and ribs according to your spicy preferences.
