Gigi's Fresh Salsa

Fresh because it's not cooked. If you made it from fresh tomatoes use green chilies as well. I used Rotel tomatoes. This is a riff on a recipe I've been making for years.

Ingredients

1 can(s)
rotel tomatoes, you octane of choice
1
rib celery, i like the tender inner ribs
1/2``
onion
1/2
bell pepper
1/4 tsp
each, ground jalapeno or cayenne, ground corriander,and celery salt
1 tsp
dried cilantro.. 1t ch fresh
1 tsp
ground mustard seed, tarragon, sugar, garlic powder
salt to taste
juice of one lime or lemon
1/4 c
olive oil

Directions Step-By-Step

Chop the vegetables fine
Pour Rotel tomatoes into a medium sized bowl and add the vegetables. Add spices, oil and juice

Adjust sale and let stand at room temp about an hour for flavors to meld.

Serve with tacos, as a dip, or on meats.
Keeps about 3 days.
