Ingredients

1 lb hot slender chili peppers, sue said her aunt sadie used cayenne and serranos
equal amounts apple cider vinegar and water to cover
2 Tbsp sugar

This recipe is from Sue Feliciano courtesy of her Aunt Sadie.
I had asked for a recipe for hot pepper sauce, and Sue gave this one to me.
I tried to find small skinny peppers, but all I could find was bigger ones, no matter, the sauce will still pack a wallop.
The jars shown are the largest: 1 1/2 qt, and the 2 smallest, 2 cups
 
 

Directions

Wash and trim the stems off the peppers. Do not chop or cut into them.

Put peppers in a stainless steel pot and cover with an equal amount of vinegar and water. Stir in the sugar.

Bring to a boil, and boil 20 minutes. Stuff the peppers into a narrow necked bottles.

Strain the liquid and pour over the peppers.

Seal and put in the fridge. I bought my bottles at Home Goods store they had a bail and a runner stopper.

Welcome Coleen, I wondered if it needed salt, so had to taste, and this is definately a keeper, I live with a hot sauce lover, puts tobasco on everything. This is pleasently bitey, wonder what would happen if next time we used Habeneros, or Scotch Bonnets :D

Did you decide if it needed salt? I didn't think about the salt, and of course the recipe is from memory, so it could be I've forgotten it. But if it turned out fine without it, then maybe it doesn't need it.

It did not need salt, was perfect just as it was.

OK - I'm going to the store in a little bit, and will get some peppers and glass bottles to do this. My husband will love it!

Maybe when all the sauce is gone, you can use a crochet hook to fish out the remaining peppers. Then you could puree them with a seeded tomato and get some really hot salsa!
